Hello!  I am new-er and was wondering if the resurrection quest is the only way to resurrect deceased pets?  I was away for a month and lost my pets D: 

Basically, yes. You could also use a curse of the undead on certain pets, but it will apply the undead effect and it is more expensive than a resurrection potion by far.
