You can technically have both by using a Class token but you wouldn't be able to check the till or edit the stock of one of your shops. 

For example, if you start off as a Rancher and use a Merchant class token you will have a Rancher and a Merchant shop. 

BUT you'll only be able to add/ remove stock from your Merchant shop and check your merchant shops till. 
People will still be able to buy things from your Rancher shop though ^U^
