Recipe name: Mug cake!

Desc[injection]ription: The most dangerous cake in the world! Why?: Because it's so easy to make!

Type: Dessert

Approximate time:  4 minutes prep time, 2 minutes to cook!

Approximate servings: 1 serving per mug

Difficulty:  Easy!

Ingredients:
4 Tablespoon Self Rising flour
4 Tablespoons Granulated Sugar
2 Tablespoons Coco powder
1 egg
3 Tablespoons Milk
3 Tablespoons Oil, vegetable or Canola
1 teaspoon Vanilla Extract
(Optional) 3 Tablespoons mini Chocolate chips, semi-sweet or milk
(Optional) Chocolate Syrup and/or Ice cream

Supplies needed:
Measuring spoons
Fork or mini-whisk
A large or tall mug

Directions:
In a large mug, put in the flour, sugar and coco powder and mix together until its even.
Put in 1 egg and mix together.
Put in the oil, milk and extract and mix until well combined.
For extra sweetness, toss in the chocolate chips.
Bake in the microwave for 2 to 3 minutes, depending on how strong your microwave is.
Top off with the syrup and/or ice cream and you're done!

Extra tips:
Make sure to get all of the powder that is on the bottom of the mug!

For easier clean up, spray the inside of the mug lightly with cooking spray.

If you don't have Self-Rising flour, a good substitute is to combine 1 cup of all purpose flour, 1-1/2 teaspoons of baking powder and 1 teaspoon of salt and make sure it is combined thoroughly.

To make sure that the chocolate chips don't sink to the bottom of the mug, toss the chips into a cup or baggie with a little flour and shake, making sure the coat the chips evenly. This will make it so they stay suspended in the mixture!

Depending on the size of your mug, the cake may rise over the lip of the cup. Don't worry! Just walk away! If you are concerned about the cake spilling over, just make sure that there is a paper towel underneath the mug.

Be careful! The mug will be extremely hot when it comes out, so give it time to cool, as well as to make the cake shrink a bit!

Midnight Munchies

Description:
This is a recipe for peanut butter cookies that is super simple and really fast; perfect for when you are craving something sweet but don't want to go to a lot of trouble making something.

Type: Dessert
Approximate time:  15 minutes
Approximate servings: Depends on your definition of serving hehe
Difficulty: Easy
Ingredients:
1 cup of peanut butter

1 cup of sugar

1 egg

1 teaspoon of vanilla

Supplies needed:
Oven

Fork

Bowl

Measuring spoon

Measuring cup

Cookie sheet

Directions:

Preheat the oven to 350 degrees.
Crack the egg into a bowl; beat to combine white and yolk.
Add sugar and baking soda, mix together with the egg.
Add peanut butter, stir until mixed well.
The dough should be a fairly stiff one. You can simply drop spoonfuls of it onto a cookie sheet and bake, or you can use a fork to make the criss-cross pattern and flatten the cookie a bit.
I have never written this recipe down so I am not sure of the exact time to bake, but it is not long. I would estimate between 8 - 12 minutes.

Extra tips:

This works with either creamy or chunky peanut butter, whichever you prefer. If you don't have any vanilla, you can leave it out and this will still taste amazing. Mini chocolate chips can be added to the recipe, just don't add too many or the dough doesn't hold together. These are really good with your favorite flavor jelly sandwiched between two cookies too!

This is SUCH a great idea. I'll definitely try some of these.

Unfortunately, I'm on of those "a pinch of this, a dash of that" type of people who just kind of cook without writing anything down. But I'll dig through some archives to see if I have any worthwhile actual recipes. And I have some amazing potato-based soups to post some time soon. When I'm done with my vacation. ;)
